It is basically a volume of water at high speed being stopped suddenly and/or not enough brackets securing the pipes at close enough intervals. Either that or you have really high water pressure. Replacing the kitchen mixer with the same sort probably won't help. You need to either choose a soft close type of mixer that has like a shock absorber inside or install a pressure limiting valve or a water hammer arrester valve. Some kind also have ceramic discs which can break causing a few issues. Is your washing machine close by? I've heard that some can make the pipes noisy when their solenoid valves start to wear.
