The reason people like glass as a splashback is because it's smooth which makes cleaning easy. Such a textured surface like stone would get oils caught in all the little books and crannies. Some stones would require sealing as well as they may be porous. You want a surface that is easy to clean and if possible does not show the grease as much. I used textured ripple glass and you only knew that grease was there, by feeling the surface. Glass is probably the best as there are no grout lines to clean like tiles. The next home that I am building my wife wants a stone surface the same as the bench tops. Not sure how that will go with heat but will investigate. Otherwise it will be glass again. You can do this with a sheet of glass in front, but you cant slap dash it together. Just glass in front of stone would look pretty cheap. I've seen this done well with other features implemented, including some lighting even an ipad for watching stuff/recipies while cooking. The main challenge is designing it in a way so that you can access the lighting/screens etc when they need attention. If you have the money, go for it, i think it can look really cool. There heaps of pics of it online.
