I'd do it before the kitchen is installed, if you do it after you may risk damaging the bench top. Unless its stone, then you can do it before the stone goes on as it takes an extra 5 days for the tops to go on.

As a Cabinet Maker I have experienced both and to be honest, finger pull is the way to go. Practicality does not suffer, if anything it's more practical. Just rip it out, you wont see it behind the fridge Do you know if its hard to get off? Assuming it's glued down. Definitely won't be glued, as CEK said, chisel under and pull. Keep off cut. Can come in handy if you need to fill in any spots particularly if fridge doesn't cover the whole wall.

Kitchen manufacturers are more than capable of doing this. Personally I have installed many kitchens for clients who have gone for this look. Very easy to do however be careful how much people with slug you extra for, its really not extra work and thats the argument they may make to you.
