Even when polishing up to 1500 grit. It adds that last level of protection. During the polishing stage most use grouts and densifiers to further strengthen and densify the concrete but it does still absorb some water. Sealing the finished product is recommended. Would love to hear what sort of finish the op has, as you have rightfully pointed out that there are varying degrees of finish that can be attained.
