I've seen a couple of resources about how to do it, but nothing yet on how to select the plant in the first place. Should I go for the really small ones that only seem to have one straight trunk above the graft, or can I go for something a little more mature? Although this seems kind of academic at the moment because the nursery tells me they won't have any till Christmas thanks to that frost, and I bet they are small ones that they get in then. Hi Englyn, if you want to grow a flat fan shape the best way to do it is as follows.Try and get a plant with the trunk already at the height you want the trunk to be before you start the fan.If it is to small let it grow a bit and any unwanted branches that grow on the trunk below the start of the fan,cut them off just below the last node.By cutting behind the node you may have the remains of a branch maybe 1ince long but as it does not have a node it will gradually turn white over a 6 week period and drop off and no branch will ever grow on that spot again. When you have got the trunk to the height you want make a rough frame out of fencing wire. The piece that goes into the ground is the height of the trunk,then solder on 5 "stems"of wire to the height you want the fan to be.Once you have done this plant the tree and put the frame behind it. You then need to tie 5 branches,one on each stem and then cut off any other growth that is left.Then go back to the 5 branches and cut them off a quarter of an ince above the last node,nearest the trunk.After about 2 weeks these branches should throw out between 3 and 5 new branches,as they each get 3 nodes cut them on the first node so they throw out multiples. Keep doing this until you reach the top of your fan by which time you should have at least 500 branches ( working on the basis your fan part is 1 metre high) so you will get as much fruit as a large tree.
