Forged knives are generally considered the best although I believe some of the Japanese knives are metal fusions and some stamped knives rate very highly. Personally I don't think brand matters so much, the good "brands" (Wusthof, ****, Global, Furi, Shun, Zwilling etc) all make great knives but it comes down to how they feel in YOUR hand. So go and try them out. See if you like the weight, the balance and how the knife fits in your hand. If you get a knife that feels right in your hands then the brand should not matter too much at the top end.
