I hard it difficult to compare tallowwood and blackbutt. IMO, the first one is much more superiour in all characteristics excluding colour which is, at the end, a personal preference Some quick googling identified that in standard application consisting of 3 coats, a good idea is to use two high-gloss levels and finish with the satin, or use high gloss, semi gloss and finish with satin. Applying 3 layers of satin is not recommended as it will obscure the timber natural feature as well as they say it is less durable comparing to the glossy ones... So, I think satin is on top..
