We have this gap in our current kitchen and find this to be practical, not a lot of travel between the two benches. A friend of mine has a galley kitchen too and their gap is 1000mm. For walking in between is fine, although when they open their underbench oven, it becomes a bit of a squeeze if you're a bigger/taller person bending down.
