For the plans acceptance phase, how critical is it to 'get it right' in the drafted drawings vs what they're agreed in written responses to update in drawings. I am just worried the contractors on site will follow drawings in lieu of builder's advise back to us in a separate document. Eg. Tiled hob perimeter to balcony as per display home upgrade, unfortunately final draft still shows none. As you can imagine, I'm hesitant to part with our 10k but wary it will take more weeks as it already took this long enough to get to this point. Is this the time to be 'fussy' or is there another construction set of drawings to sign-off.

Im not exactly sure of this either. Wary of once you pay the 10k, then other changes are 1k a pop. But they have assured me more than once that changes resulting from your landscaping plan, cdc/da required changes, and interior selection, changes don't cost us to update plans. And obviously electricals too, we haven't got to that phase. But like you i would want to be 100% sure the plans are accurate before construction starts! I'm fully expecting my kitchen, laundry, butlers layout will change post those detailed design phases. i also want to change some door widths and shower types, havent even thougt about the 3 WIRs (use elba or do post handover), want to put a chute in - i was told that's in interior selection phases. Things like missing niches etc that were on tender plans but not proper plans now ive gotten put on. And anything clearly wrong, asked to be fixed.
If i was you id insist on anything structural being in now, but not tile choices maybe. Not sure i know what a tiled hob is sorry lol to know if crucial to get in plans now or not (our dwarf walls on alfresco are in plans now if that helps). The only thing showing on my plans now is glazing and window upgrades, waterfalls, recessed flooring, ledges etc. Not other fixture and finishing selections i have. Like I have a flooring provision, but it still shows tiles on the plan...I guess as I haven't locked down that selection.
It is frustrating that we turn plan comments around in 1-2 days and they take weeks. But so far they've been great to deal with so Im happy everything is nice and relaxed. But i thought I had the longest tender in the world, but now im actually wondering if i will make tender expiry date!
