Would taking off the floor tiles in the bathroom affect the waterproofing? The demo trades said it wouldn't but wanting to make sure first. Certainly would. Any jackhammering up of floor tiles would mean new Waterproofing would be required. If the old waterproofing membrane is under the screed bed and they can remove the tiles without removing the sand and cement screed below, then you may be ok. That said it's usually hard to do that. Looks like your tray could come out, but there may be no fall in the screed bed below. In my opinion it would be best to speak with a tiler to get there option. Either way I'd budget for new Waterproofing as it's one of the most critical things to get right in a bathroom. Good luck. The tile stripper trades said they normally just remove the tiles and shower base leaving the cement floor which they would sand down to ready for tilers to tile over again. I was hoping then to tile the entire bathroom floor and use the tiles as a shower base making it look more up to date. I hope that is all possible. Only issue would be if they originally waterproofed ontop of the screed which they can sometimes do.
