It didn't cost me a whole heap more to get 40mm than 20mm. The 20mm has a more minimalist look which some ppl prefer, and I can see why. Joles are you out there? I think she prefers 20mm... sleeker and all that. I can appreciate that it would make a tactile difference by being cooler just curious on the look. As donuts said, I prefer the look of the 20mm. I like that it appears lighter and as if floating. And I love 20mm with water fall edges. It's just a bit different. The 20mm especially looks great if you are thinking about colour. Some of the darker stones can seem quite heavy in 40mm but in 20mm they don't. It's all personal preference... I don't think you can go wrong with any thickness these days. They all look great! I leave you to fend for yourself, figure things out yourself. I think it depends on how big your kitchen is too, because my living and dining/kitchen is all in one, I didn't want the benchtop to take over the area. This rental has 20mm and whilst it is nice we are having really thick benchtops (a) because I have so much of the darn stuff we need to use it & (b) because the island bench is an integral part of the large open plan room.
Am just about to go to the local HIA Building Centre to decide whether I want 80mm, 100mm or 120mm. Some things are worth waiting for.
