The display is the same and it doesn't feel or look odd. Having said that our mates have 2.7 throughout with 2.4 doors and looks good too. They also have 3m high in the entrance and media then coffered the ceiling. Does look and feel amazing but the $$$ for me wouldn't justify it. It comes down to your budget and what you can get to fit within it. I think you would be better off raising the whole house, rather then only parts, but hard to know without seeing your design. I haven't changed my doors or anything, the only thing I did was extend the overhead cupboards in the kitchen to take advantage of the higher ceiling. Ceiling height variety can help create different feels for a house. E.g. lower celings for more intimate spaces (bedrooms, reading rooms) and higher for formal spaces (dining). People generally don't feel cosy and intimate in a room with high ceilings and likewise, in a room usually containing many people, low ceilings feel uncomfortable for most. Cost and ineffective ventilation/air conditioning may be a barrier to this.
