I didn't know about it before it was too late. We just moved in last week and it has been raining non-stop. The noise is tremendous. In addition to its insulation and sound deadening properties, it also allows minor leaks or condensation under the roof to run into the gutter.
Sarking is also required in high fire risk areas as it prevents embers getting into the roof space. Also out additional rock wool blown in insulation into our double cavity walls that didn't need it to get the 6 star rating. Makes a huge difference and glad we did it.
