I've found Smeg have a 60cm oven with a proofing function, but not a 90cm one. I know many will say slow is best and not to use an oven, but I'm not here to get into the logistics or pro/cons of using a proofing function in an oven. What I am only after is if anyone knows any manufacturers that have a 90cm oven (free-standing preferred with gas hob/cooktop) with the proofing function. Thanks for any help! So having a proofing function on an oven would make the process faster, because at the moment baking things like cream buns, or anything else bread/yeast related takes HOURS. All you really need is very low ambient stable heat. You could probably achieve this by using a tray at the very bottom and the proof the dough in the middle of the oven. I've also been hesitant to just try the oven on a low heat, but maybe it is worth a short, as I'm quite attached to the 90cm oven capacity. My new oven will have a defrost function (falcon 900 professional FX) Not sure if thats just the fan or a little heat too? I prove my doughs either on top of my coffee machine or turn the oven on to preheat and sit the bowl on top of the vents at the rear of the Falcon cooker. Some things are worth waiting for.
