Select the 15 degree beam angle version. Buy two of them, position them end-to-end at the base of your stone wall, approximately 100-150mm out from the wall. Perhaps set up a night time mock-up so you can position them in your preferred spot. Option 2 will not produce a significant amount of light, they are basically toys. I wouldn't bother. Another important thing to note is that if your stack stone is a dark colour (grey, brown, black), then RGB colours will not show up particularly well at all, you will hardly see them. If the stone is a darker colour you may be better off with just a single colour warm white LED. It will create an interesting pattern of light from the uneven shadows caused from the stack stone. If your stack stone is a light colour (white, light grey, beige etc) then the colours will show up very well, it will be a real standout.
