There is a previous thread on bamboo flooring. Do a search and you'll find most answers there. In a nutshell, there are three types of bamboo flooring - horizontal, vertical, and strandwoven. Yes, they do scratch, but strandwoven is a fair bit harder than Jarrah. Horizontal (uses the 'face' of the bamboo pole as the surface of the board) and vertical (uses the sliced edge of the bamboo as the surface of the board) exhibit 'spotty' kind of look (bamboo have internal webs every so often). Strandwoven is when they cut the bamboo into thin strands then press them all together, and IMO looks like wood. ChrisL 1000000% definitely add insulation.
