Kitchen extension to add Butlers pantry

We are extending our house and adding a Butlers pantry in behind the current kitchen. The pantry cupboard circled is getting removed to make a doorway to add the walk in butlers pantry behind. It will have a bench top running and the way along with cupboards underneath and then open part pantry down the far end.

My problem is that I'd like tiled splashback in there as I'll use that space for slow cooking, toaster etc. The tiles will be visible as I won't be putting a door on.

The current tiles in the kitchen which I love are Southern Cross Prague in Tempest?? This colour is discontinued 🤦‍♀️😢 What would you do for the tiles in the pantry? They won't be next to the other tiles but still need to match in.
