I plan to make a splashback for a kitchen bench from used hardwood and I’m trying to choose a clear timber finish for it, preferably oil or wax. The splashback won’t be near a sink, so it won’t get much water on it, but is either side of a stove (with its own splashback), so may get a bit of oil splatter from cooking and occasional bits of splashed food that will need wiping off.
I want a finish that is safe for a food preparation area, that lasts a long time before needing reapplication, that can be reapplied easily and quickly and with minimal mess, that doesn’t encourage mould and that does minimal harm to health and the environment during application and wear. The splashback is in a very light room and will get a lot of indirect sunlight reflected onto it.
So far I’m considering Timber Treat lanolin, Livos Kunos oil or Tung oil.
I’m interested in any evidence for whether Linseed oil encourages mould or not.
I’d appreciate any recommendations, stories of your experience or warnings about what not to do/use.

I'd use your regular Canola Oil. Safest option for food prep area as you said. This is what woodworkers use for things like timber chopping boards, some bench tops etc. Cheap, easy and always some in the cupboard.
