You can read about magnetic induction cooktops here. They are the best cooktops to cook on in my opinion. They are very efficient and quick to heat up. (much quicker than gas). I have an Electrolux Gallery induction top and I absolutely couldn't do without it. The reason why everyone is not buying them is because of the high initial purchase cost. Given time, they will eventually be more affordable. When I design kitchens I always take into consideration the safety issues, the kitchen is a busy zone in the house, (not in mine, as you can tell I’m never there!) These cooktops came out quite a few years ago; I suppose people find change hard to deal with. Go with your cooktop, you will not be disappointed! [Traditional electric cooktops use some form of electric resistance to create heat, which is transferred to the saucepan and its contents. Induction cooking is based on magnetic fields: each ‘element’ (an induction coil) generates a magnetic field that induces heat in steel cookware placed on top of it. In essence, the pot becomes the element that cooks the food, so the cooktop surface doesn’t get as hot as other cooktops. And not everybody makes them, the ones they do are quite pricey, Miele start at over $3,000. Plus you need special cookware for it, your old one might do if a magnet will stick to the bottom of a pan. There are just two manufacturers Miele and Kleenmaid. I bought a Miele for about $3000 and the retail price rose about $300 about six months later. I don't know where the prices are at now but I suspect still rising. There are other manufacturers such as Electrolux, Gaggenau, Kuppersbusch, Ilve and Brandt. You can get 50/50 induction / ceramic tops (2 hobs induction / 2 hobs ceramic) that are more affordable than 100% induction. The kitchen cabinetry may have to be modified (to allow for cooktop ventilation) if you are going to install the cooktop in an existing kitchen. Why would you need ventilation if it doesn't heat up? Also anyone know whether this technology is more or less subject to failure? Apart from getting blocked, gas is pretty reliable, do these induction coils ever burn out like so many transformers? Is there any issue with RF interference? Health issues with having a strong electormagnetic field near you? I'm not knocking this but I would need a lot of convincing to part with $3000 for an unknown technology use. I like the energy conservation side of it, but don't want my kids zapped by stray radiation anymore than I want them to burn themselves. Cooling Induction Tops 12Sep 27, 2006 5:11 pm Hi 3x,
Most induction tops on the market have built in cooling fans for the induction mechanism. These fans can run during and after use and need to be vented. There has been some discussion regarding the possible effects of induction tops on pacemakers but I am not aware of any conclusive findings...I would be filing induction tops in the same danger category as microwave ovens...which is way below, say, step ladders or petrol fumes. I wouldn't say that the technology is unknown - it has been around for quite a while - but you are right; it is a lot of money to spend on a cooktop. My personal preference is still for gas - I don't cook at lightspeed but I like quick controllable heat and the responsiveness and control of the flames satisfy my needs.
