Is this feature in all new stoves? Alternatively is it better to have a separate sensor and cut-off valve fitted. Check the manufacturer's brochure carefully and verify by asking if you have any questions. "Choice" is all over this issue and does not recommend any gas cooktop without flame-failure protection. There are two kinds of in-cooktop safeties, one where the automatic ignition kicks on when flame fails to reignite the burner, and one where the gas gets shut off. The gas shut off mode seems more common in Aus. I think both kinds of shutoff rely on sensors that use the tiny electrical charge in a burning flame to determine if the burner is alight or not (non-engineer explanation: the burning flame produces ions which generate a teeny-tiny electrical charge that is read by a sensor).
