Browse Forums Kitchen Appliances Re: Induction or gas cooktop plus steamer oven 9Mar 11, 2011 11:02 pm appliance guru Whoever told you an Induction does not work well with woks have obviously never used an Induction they are more powerful for wok/frying etc cooking and have lower running costs then Gas (Much quicker in transferring heat) Cant compare As stated, I have a Siemens induction cooktop, and having used it with a wok (both SS and cast iron), I'd say it's not the same as a good gas wok burner, and you have to use a flat bottom wok, which isn't ideal. Different story if you are using a wok induction cooktop with matching wok (such as Spice Temple is using), but the normal cooktop just doesn't spread the heat up the sides sufficiently. Saying that, most gas wok burner doesn't have a very high energy output, so would be no better I guess.
