She has plastered most of the walls but has left smaller areas brick. It looks really good. She has a white colour scheme going... white walls, white kitchen, light timber floors. i would suggest plastering the walls but maybe leave the fireplace itself brick?? And the mantle painted white?? Having light painted skirts & arcs help to modernise and lighten the room. We are slowing working our way through our home plastering the brick walls. We have extended and plastered 2 bedrooms, prior to doing this as they had 3 walls brick and one wall cupboard they looked like small cells. Now they are large bedrooms, that have walk-in robes. The internal walls, i.e. dividing walls are plastered. Below is a photo, looking down the hall toward the entry, you will see the brick wall around the front door. It's just the main wall which is large and covers the lounge/dining area and has the fireplace that I am having the dilemma with. My DH suggested exactly what you have suggested, leaving the fireplace brick. He was a bricklayer by trade, and he said he used to build A. V.
