Meat Sauce: Olive Oil Mince 1 large onion Garlic to your taste 1 tsp salt 1-2 tsp Spaghetti Bolognaise herb mix (Master foods) 1 x 50g sachet of Tomato Paste 1 x 700ml Bottle of Bertoli Provvisto Sugo Sauce Put small amount of olive oil in electric frying pan and add the sliced onion and garlic. When softened add meat and brown. Then add salt, herbs tomato paste and sugo sauce. Cook on low for an hour or so till sauce thickens. Cheese Sauce: I don’t have precise amounts for this sauce. Butter Flour Milk Cheese Salt & Pepper to taste. (I only use pepper.) Melt butter, add flour, salt & pepper and cook off. Add milk slowly stirring all the time. I use a whisk. When thickened to your liking add cheese and maybe more milk if required. I don’t make this sauce too thick as it is hard to spread if too thick. I then use instant lasagne sheets and put in boiling water with a little oil added to stop the sheets from sticking. (I use the roasting dish for this) bring it back to the boil till sheets soften. Then start layering. Spag Sauce, Cheese Sauce, Lasagne sheet and continue till you have enough layers. (I do about 3 layers) Top with spag sauce then parmesan cheese. Put in 150C oven for 20mins then take out and put some cream around the edges and with a knife push the cream down the sides. Put back in oven till cooked. Slice and serve. (Not sure of the weight of the meat. I always buy it from Woolworths for spag sauce. It is the premium one in the larger tray about 8-9 dollars.) A balanced diet is chocolate in both hands. Low fat chicken and prawn laksa Thai basil lamb with mint and lemongrass Chiang Mai Chicken ... though I don't use the coconut milk, I use the skinny evaporated milk one with coconut instead, still delicious but low fat. ~ trying to build our dream home by the sea ~ Re: Family Favourites 6Sep 18, 2011 4:15 pm I just made this, might become a favourite, they seemed to like it. My mate who is mexican gave it to me, but it is a spanish dish Like ⋅ Add a comment ⋅ Pin to Ideaboard ⋅ Riojana Potatoes Ingredients 1 tbs olive oil 1 kg of floury potatoes, peeled and cubed 2-4 garlic cloves, chopped finely 1/2 an onion, sliced finely 2 chorizo sausages, sliced (large, or 4 small ones..10 cms long. That is what I used) 1 red or yellow pepper, diced 1 cup tomato purée 1/2 cup chicken broth (I used water with a stock cube) 1 teaspoon paprika (smoked is best) salt and pepper to taste parsley Method 1.Put the oil in a big saucepan and fry the chorizo for a couple of minutes, stirring so it browns evenly. 2.Add the onion and keep stirring until it becomes translucent, add the pepper and the garlic and cook for a few minutes. 3.Add the rest of the ingredients (potatoes, broth, tomato purée, paprika and seasoning's). 4.Cook for about 20 minutes, adding more broth/water if necessary, stirring and slightly crushing the potatoes so their starch is released and thickens the sauce. 5.Serve in bowls, garnish with chopped parsley(optional) and serve with plenty of crusty bread to soak up the juices. ( crockpot/ slow cooker Frees up the oven for cooking a roast etc later. Do it in your laundry and no one will know there is dessert..whaoao!) Chocolate self saucing pudding Sift together: in the crock pot bowl 2 Cups Flour 4 tsp Baking Powder 1/4 tsp salt (salt brings out the chocolate flavour of cocoa) 3 1/2 tblsp Cocoa 3/4 Cup Sugar Add: 1 cup milk 2 Tbls Melted Butter 1tsp vanilla mix till combined Mix Well in a large bowl: 3/4 Cup Brown Sugar + 3/4 cup white sugar (or a bit less, or all brown if you like it really sweet) 5 1/2 Cups Boiling Water 2/3 Cup Cocoa ( I know, a lot but worth it) 1/8th tsp salt Slowly pour sauce over batter, (or put dry ingreds in crockpot and pour boiling water over it all) cook 6 hours or a bit longer...hey??!! who cares, it wont burn or bake at 170 degrees until cooked (about 30 mins) in the oven if you like kids love it, it feeds 8-10 though, so good for a function or our family for dinner no eggs, not much butter, and could be dairy free if you use olivio and soy milk Re: Family Favourites 11Sep 19, 2011 7:44 am ESB Here's a few that I cook regularly, favourite would be the Chiang Mai ... but the laksa is coming in a close second. Re: Family Favourites 12Sep 19, 2011 9:07 am A client gave me this recipe a couple of weeks ago, tried it straight away and we have a hit with all of the family. Poormans Chicken Chicken Legs Low fat yoghurt Fresh breadcrumbs (seasoned/spiced how you like) Flour Roll the chicken legs in flour, then roll in yoghurt, then in the breadcrumbs. Put on a plate and cover in the fridge for a few hours. Put on an oven tray on baking paper (otherwise they stick) and bake in a moderate oven until golden and crispy. I serve with oven baked chips for a treat or mashed potato and vegies. . I cringed at the thought of yoghurt in this recipe, as I really, really dislike yoghurt, but they are delicious and we now have our own takeaway styled chicken without the fat (or guilt), plus it is sooooo cheap to make! ~ trying to build our dream home by the sea ~ Family Favourites 13Sep 20, 2011 7:59 pm Deemaree I'm planning on trying both the Spanish Potatoes and the Chiang Mai Chgicken this week! Selina-let us know how yours turn out too! The Spanish potatoes were yummo! Although the potatoes took alot longer to cook- about 45 mins and I had to add WAY more liquid. Re: Family Favourites 14Sep 20, 2011 8:11 pm 45 mins....did you cut them up
that is longer than a jacket potato! sorry mate, dont know what went wrong there. I tripled the recipe and just threw in loads of water..ha ha and cooked in about 25 mins hope the kids werent starving waiting that long. Family Favourites 15Sep 20, 2011 11:37 pm Yeah I cut them up lol! I think it was because the sauce was quite thick (and also my electric pan is quite slow). I didn't mind though it was well worth it! Will absolutely cook it again! Re: Family Favourites 16Sep 22, 2011 12:44 pm ooow, thick sauce, nice!! yes, chunky cut up potatoes, are better than tiny dice, which I did first... not so good I have a soup recipe for you all, that even my kids eat (I have a fav pumpkin one too, but this is a little different, no one can tell what it is made from) 20 grams butter 500 grams kumera (sweet potato for you heathens) peeled and cut chunky dice 1 tsp curry powder 2 cloves garlic melt butter in a pot, add the curry and garlic and then kumera and fry in the butter for 2 mins..most important step, as gives a nice flavour add 1 1/2 cups of water and cook for 20 mins add 2 tsp chickent stock (or 1 cube) and 1 can evaporated milk/ 1 can reduced cream..gives it a NICE rich creamy texture (can be lite evap...saves on fat calories!) and puree salt and pepper to taste and add more water if too thick very rarely do people guess it is sweet potato, they just cant work it out. Dont you love those games! Re: Family Favourites 17Sep 22, 2011 12:46 pm ps having that tonight, as a starter...as the main is a bit lean. need to go grocery shopping later. Re: Family Favourites 18Sep 22, 2011 8:08 pm I've got a fair slab of Sweet Potato sitting on the bench....I know what we are having tomorrow night! It's done by taste & feel-although I always use half pork & half beef mince ( makes a "silkier" meat sauce).
