I'm a really lazy cooker... I like quick meals that dont take much preparation or time... I'd love for you guys to share your favourite quick easy recipes containing 5 ingredients or less!!!
Note: Herbs/oils etc dont count as ingredients
Here's some that are easy... I just need more inspiration, as I tend to stick to the same meals over and over...
Beef and Snow Peas
Ingredients:
•2 Tbsp. oil
•1 lb. beef flank or round steak
•3 cups snow pea pods
•1-1/2 cups shredded carrots
•1 cup sliced mushrooms
•1/4 cup water
•3/4 cup purchased stir-fry sauce
•1/8 tsp. pepper
Preparation:
Cut beef into 1/4" thick, 2" long strips across the grain. Heat oil in heavy skillet or wok. Add beef and stir fry for 2-3 minutes until beef is browned. Remove from skillet. Add pea pods, carrots, mushrooms, and water to skillet or wok.
Cover and cook over medium-high heat for 3-4 minutes until vegetables are crisp tender. Add beef, stir-fry sauce, and pepper to skillet. Stir fry until well heated. Serve over hot cooked rice or noodles. Serves 4
Chicken and Asparagus Stir Fry
Ingredients:
•2 Tbsp. cornstarch
•1 cup chicken stock
•3 Tbsp. olive oil
•1 onion, finely chopped
•3 cups asparagus, cut into 1-1/2" lengths
•1 red bell pepper, cut into thin strips
•salt and pepper to taste
•3 cups cooked cubed chicken breast
Preparation:
Combine cornstarch and chicken stock and blend well. Prepare all ingredients. Heat oil over medium heat in a wok of heavy skillet. Cook onion for one minute, stirring constantly. Add chicken stock mixture. Increase heat to medium high and add asparagus, red pepper, and salt and pepper to taste. Cook for 2-3 minutes, stirring constantly. Add chicken, cover, and reduce heat to low. Cook until chicken is thoroughly heated. Serve over hot cooked rice. Serves 4-6
Prawn and mango salad
Ingredients (serves 4)
24 large cooked prawns, peeled, deveined (tails intact)
1 large mango, peeled, thinly sliced
1 Lebanese cucumber, sliced into ribbons (see tip)
1 cup dry-roasted cashew nuts
Method
Arrange prawns, mango, cucumber and cashews on plates. Serve.
Notes
Use a vegetable peeler to slice cucumber into ribbons.
Pasta and broccoli
Ingredients (serves 4)
500g dried spaghetti pasta
750g broccoli, trimmed, cut into small florets, stalks removed
1/3 cup olive oil
2 garlic cloves, crushed
Method
Cook pasta in a large saucepan of boiling, salted water, following packet directions, until tender. Add broccoli to pan for the last 5 minutes of cooking. Drain. Return pan to medium-high heat.
Heat oil in pan. Add garlic. Cook, stirring, until fragrant. Return pasta and broccoli to pan. Stir to combine. Serve.
Notes
You will need about 3 heads of broccoli. After cooking, the broccoli should be broken down, with small pieces stuck to each strand of pasta.
You could serve this dish topped with finely grated parmesan cheese.
