Re: Food, glorious FOOD - What's your signature dish at part 42Oct 08, 2010 2:12 pm I make meringues (but they taste like mini pavs as I add vinegar etc), I put 2 together with cream and pile on a plate (optional choc sauce dribbled over them) dust with icing sugar. (makes it pretty) 2 egg whites make up to 70 on a good day! I KNOW!! in a bowl put 2 egg whites 1/4 cup boiling water 1 1/4 cups sugar 1 tsp vanilla 1 tbslp cornflour 1 tsp vinegar place that bowl over a pan of simmering water and whisk for 10 mins (it will get decidely harder at 8 mins, KEEP GOING! turn off element, as might start to cook in the bowl~ if it is really boiling hard) put teaspoonfuls on a greased baking tray (you will need 2 trays, as I make between 55 and 70 depending on the size of eggs used) 125 deg c 30 mins (bake mode, not fan bake) take out, cool on tray and then put two together with cream and put on a serving plate, dust with icing sugar, (optional... or just pile on a plate with no cream and dust with icing sugar, ) or dribble with choc/ caramel sauce. people go..whoaoao! when they see it, but soooo cheap to make. kids LOOOOVe them Re: Food, glorious FOOD - What's your signature dish at part 43Oct 08, 2010 2:29 pm that sounds great kiwi...if you have the right cornflour it can be gluten free too!!! Stephanie Alexander's lemon tart - the absolute best EVER. I won't order lemon tart at restaurants anymore, I've had too many disappointments. It's never as good as mine. I make my own pastry too... I can't type out the recipe (too hard on my poor overused forearms), but this is very similar, and says it's based on Stephanie's recipe. The other pic is a Raspberry-Frangelico Tiramisu Cake. It was from a Good Taste magazine a few years back. It's always a hit. If I can't be bothered layering it into a cake, I make it into a trifle instead. It tastes just as nice, only it's not so impressive-looking. Here's the recipe: http://www.taste.com.au/recipes/14712/raspberry+frangelico+tiramisu+cake I'm also famous for Black Forest cake, choc-mint cheesecake, chocolate mousse (I have three different recipes, including one made with Toblerone), hummingbird cake and various other chocolate delights. If I made them as often as I'd like, I'd be the size of a small house. Re: Food, glorious FOOD - What's your signature dish at part 49Oct 11, 2010 7:26 pm Thanks kek. I really like the look of the Raspberry-Frangelico Tiramisu Cake! Hot Spiced Tea (Masala Chai) Serves 4. (multiplied by however many people are being catered for). 4 cups water one 6cm cinnamon stick 10 green cardamom pods 10 whole cloves 1¼ cups milk 2½ tablespoons sugar, or to taste 6 teaspoons Rooibos tea Bring to the boil the water, along with the cinnamon, cardamom and cloves, in a medium saucepan over full heat. Reduce the heat and simmer for 10 minutes. Add the milk and sugar, return to the boil, drop in the Rooibos tea, remove from the heat, cover and set aside for 2 minutes. Strain and serve immediately. Note: unlike most teas, Rooibos tea can be left to draw for long periods then successfully reheated without any bitterness like black tea. Life is; then you tell yourself a story. Re: Food, glorious FOOD - What's YOUR signature dish at part 56Oct 22, 2010 7:49 pm ive got a new signature dish for you,if you have a crockpot/ slow cooker (just tried it)
it is tooooo die for cooks for 6 hrs min on low. Frees up the oven for cooking a roast etc later. Do it in your laundry and no one will know there is dessert..whaoao! Chocolate self saucing pudding Sift together: in the crock pot bowl 2 Cups Flour 4 tsp Baking Powder 1/4 tsp salt (salt brings out the chocolate flavour of cocoa) 4 tblsp Cocoa 3/4 Cup Sugar Add: 1 cup milk 2 Tbls Melted Butter 1tsp vanilla mix till combined Mix Well in a large bowl: 3/4 Cup Brown Sugar + 3/4 cup white sugar (or a bit less, or all brown if you like it really sweet) 5 3/4 Cups Boiling Water 3/4 Cup Cocoa ( I know, a lot but worth it) Slowly pour sauce over batter, (or put dry ingreds in crockpot and pour boiling water over it all) cook 6 hours or a bit longer...hey??!! who cares, it wont burn . Do knife test in the middle of pudding. or bake at 180degrees until cooked (about 30 mins) in the oven if you like kids love it, it feeds 8-10 though, so good for a function or our family for dinner. so far have cooked it twice in 2 weeks, and I can see it being a favourite. Re: Food, glorious FOOD - What's YOUR signature dish at part 59Oct 22, 2010 8:26 pm sorry, meant a slow cooker. (have edited post to inlcude the new name) crock pot was the older ones (brown seemed to be a common colour) now they are black and shiny stainless steel..and a little hotter on the temperature I hear But I use a ZIP brand one (yes the best appliances for me! NOT) which has, low, high, warm, off on it and is about 3 yrs old. even an old one I think would be fine for 6 hrs cooking. maybe that is why the weight isnt coming off...cos of THIS THREAD!! with the ripple cake (which I have now sussed and tastes divine ) meringues, choc cake, now this..ha ha Food, glorious FOOD - What's YOUR signature dish at parties? 60Oct 23, 2010 6:40 am Haha, sorry Kiwi.
