I tried it once, but it was a PITA and a 44 degree day. (It would have helped if I had some of that stuff that makes it go a little bit hard) Not so good with fondant Love your royal icing flowers, they are fun to make - daisys drive me up the wall! I generally stick to ginger bread creations for Christmas. OK...secret's out I c.heat with the icing flowers and buy them already done! BUT...your's are amazing!! I actually haven't really done much piping in the past, and have recently started with chocolate (all the hearts). I used a different nozzle (large one) and a disposable piping bag for the recent cupcakes, and loved it! I only have smaller nozzles, but the effect looks so much better with the large ones. Your gingerbread Christmas creation is amazing!!! It must have taken you ages! We c.heat a little with gingerbread houses and buy the packet already done, just have to put it together and decorate. I haven't actually used the stuff to make the fondant go hard, it usually dries overnight, but I did have troubles with my poodles (last year!) sinking, and they ended up being fatter than what they should have been! But yes, attempting to make icing creations on a 44 C day would make anything melt...including me!! It's all good fun, though and I love being creative. Henley - Wilshire Mk 3 ... I love my house!! Nah, Dad just used paper and printed the images (along with the words "The Mystery Machine") and made sure we removed it before cutting and serving the cake!!! He told me (after I had icing disasters) that he uses the pre-packed royal icing (is that what it's called?) and just colours it. Hmmm could have told me that before I started!!! Still not in. Don't ask!? Re: For all those who like cupcakes 306Sep 19, 2011 10:48 pm Hi Bel, Royal icing has egg white in it and it dries as hard as hard as hard! You perhaps mean the fondant stuff that comes in a packet, is white and you can colour it? I use it often to 'model' things out of, or you can just roll it out like pastry and dump it on the cake! All my poodles and cats are made from the roll out fondant stuff. Have you used butter icing before? I actually find that works the best for me for birthday cakes and cup cakes. It's quite thick and won't run off the cake! I either slap it on with a pallet knife for a smoothish base for a cake before decorating it further, or pipe it onto cupcakes to make pretty swirls. Took 2 rectangle cakes to mould (with quite a bit left over) and about 6 hours over 2 days to 'create'. I was going to do strings but completely ran out of time...oh well. Yes, all butter icing except for the black, white and silver details (they are fondant). For a large cake you possibly need to make 2 batches, and this is pretty much the recipe I use. Just make sure the butter is at ROOM TEMPERATURE before starting! http://www.taste.com.au/recipes/12028/easy+butter+icing I believe it also helps to freeze the cakes (if it's a plain butter cake) before cutting into shape and icing. You get no crumbs mixed into the icing then! I also believe some people do what is called a 'crumb coat' first to coat the cake in one layer of icing, then go over the top with the colours to get a nice smooth finish. Here is my latest effort for my birthday last Saturday (yep...had to make my own cake!). It was a Hollywood theme, so I decided to do another cupcake tower with a small cutting cake on the top. I painstakingly made all the toppers in the few weeks prior (film strip, clapper boards, movie camers and stars) and combined them with gold cashous and butter icing. I also took the easy option a bit this time and used a 67c Woolworths brand cake mix packet, and they worked brilliantly!! I used to have so much trouble with 'made from scratch' cake batter shrinking away from the papers and sinking in the middle. I think for everytime I make cupcakes, I will use a packet mix!
