We want to minimise structural changes and stick within the current footprint. My concerns are how narrow the kitchen will be (3000mm) particularly the walkways (950mm), that access to the back door will only be via the dining room, that the stove will have a full height window splashback )not sure how we would install a range hood)and the cost of removing the section of wall (how do I determine if it’s a load bearing wall? I’ve climbed up into the roof, we have a hip roof with purloins resting on the wall I’m wanting to remove, though not in the section I’m wanting to remove. Yes, it will need a support beam/truss if there are strutting posts within the roof, hence engineering Make sure you can understand and quantify the changes Knockdown and Rebuild Upgrades Costs discussed here You can get someone to model it for you..the 3D Model comes in handy on site during construction and inspections. It is of the start of the point I want to remove, the second pic looks toward the outer wall, along where I want removed.
