We are the owner builder for our extension.
One thing on the final inspection checklist states “A letter from the builder certify that the party wall system has been installed accordance with the relevant fire test , acoustic test.
We are building the extension attach to our double wall existing house so the party wall system relevant to our case?

You are the builder so you will need to provide the required "Fit for Purpose" Details and Compliance Certification
I suggest you contact the engineer that did your engineering drawings. hth
