We have a 30yo solid brick house and planning a major renovation.
As part of the reno, I am considering converting the exterior walls to RBV.
I'd be interested in any thoughts or reactions anyone might have.
BTW we are in Melbourne SE.

If you remove the outer skin of bricks, would this not damage the inner, I imagine they are joined somewhere. Also if you remove the outer skin can the inner support the structure as there is no frame. Depending on what is in place, and what loads are on the walls it could be tricky. My gut feel is it is likely to be more trouble (and expense) than it's worth. Presuming you are looking to do it for insulation properties. If so maybe consider alternatives, like in wall cavity insulation. The only thing the external walls carry is the eave lining. The window and door frames are also normally tied in to the external brick. As I said that is in standard construction and there are variations on this so you would need to check. It would technically be possible to do what you want too do, however it would be very expensive. As Rob said, cavity insulation may be a cheaper exercise. When I built our house I built the western double storey wall in RBV. I had the brickies brick the internal walls first, complete with windows and then I framed up around this and insulated and sheeted everything. It worked fine, and is essentially what you are going to try and do. There is not a great deal of information about RBV so it's important to have a competent carpenter who can work through the little issues you will face. Good luck.
