However, I still want to do a course without taking the test so I can learn as much as possible about what I need to do and sequence of construction. One organization has offered a cheaper price for the materials without sending in a test.

From my experience, the information in there is much more organised, got lots of tables, check lists, instructions, ...etc. But as the focus is on owners who normally don't have tradesman experience/license, it's like a high level project management course in my opinion.
