While I do love island benches, it is not a high priority. My priorities in the kitchen are that there is enough usable bench space as well as a huge walk in pantry (being shorter I find it difficult to reach items in the top shelf of overhead cupboards, so prefer a large walk in pantry where items are easier to reach). R4 in ceiling and R2 in walls is plenty, R3.5 and R1.5 are plenty sufficient most of the time but I always recommend the R4 and R2 as it is not much more $$. You will not overheat the house in winter with double glazing, the worst case scenario you will have to open a window for 20 mins, research the upgrade to double glazing before you buy the windows, get a quote for both types of windows. Also you should be inspecting the work of the insulation installers to see if they are not leaving any gaps in their work or taking shortcuts. Also make sure all your windows are weather sealed when installed in the frame. these little things make the biggest difference.
