In-Ceiling speakers in the kitchen are not a bad idea, or in any room really, if you enjoy listening to background music while doing whatever you do in that room (eg. listening to the radio while cooking...). With In-Ceiling or In-Wall speakers at least they are out of the way - not taking up any floor/bench space - and often not seen (or at least noticed) at all. You then also have a choice as to how intrusive, or not, the components that drive and control these speakers are. For In-Ceiling or In-Wall speakers, if you can, you should get the speaker wire installed during frame stage of construction, but the rest should be no difficult after you move in.
