the one that feels most comfortable for you to view it... as it is Your house and Your TV .... get two mates to hold the tv up while you and partner sit down and "view" the screen then set it to the best hieght that doesn't strain "your" necks to watch it...
of course a really good idea is getting a Bracket that allows it to either tilt up or down incase you get a new sofa... so you still down strain your neck while watching tv...
but of course if you and your partner have some vast hieght differnce then you may need to compromise on the TV over all hieght...

Sounds dumb, but sticky tape pieces of paper or cardboard together the same size as the TV, draw the screen on it roughly. Makes it really easy to move around and get right. Then double check with the real tele.
We mounted our 42 inch plasma at about 1600mm high (top of tele). We sit around 3 - 3.5 metres back on a fairly low couch and find this height perfect.
The hole in the mount for cables also lines up with the top of the noggin in the wall which makes running the AV cables through the wall really easy (we went up into the ceiling into another room). This is another consideration, particularly if you have lots of cables.
