Also, this is just a power amp and would therefore still need a separate pre-amp to do the input selection and proper volume control etc. Combine these two devices and you get an 'integrated' amplifier - which is what your typical stereo or surround 'receiver' is. You're other ideas are good too - volume controls etc. Don't worry about the ohms - if all the speakers are the same (eg. 8 or 6 ohm) then as long as you are using an impedence matching speaker switch the amp will be fine.
