I can fully understand your frustrations, especially because it shouldn't be that hard for them to update your plans. And their lame excuse just isnt professional enough.
I hope things work out for you. I'm starting to hate the building process, might even look into established homes again.

How do you remove one of these ceiling air con vents? And is it possible to disconnect the duct joined to the vent from inside the house, without going into the roof cavity?
