Ultimately it will come down to a personal preference call for you, but for me it would always be to include a door so that it can be closed off and any mess can be hidden out of sight when visitors drop by. Depending on the proximity of the WIP to exterior windows etc. having a door to the WIP may also help to keep the pantry temperature under slightly better control as some foods will need to be stored in a cool dry place. I know that your image shows a hand drawn WIP extension, but just be mindful of keeping enough space between the WIP and kitchen island bench to be able to walk past with ease. Also, make sure that you have good lighting in the WIP as they can tend to be dark areas within the house.
