I think you would be better off raising the whole house, rather then only parts, but hard to know without seeing your design. I haven't changed my doors or anything, the only thing I did was extend the overhead cupboards in the kitchen to take advantage of the higher ceiling. Ceiling height variety can help create different feels for a house. E.g. lower celings for more intimate spaces (bedrooms, reading rooms) and higher for formal spaces (dining). People generally don't feel cosy and intimate in a room with high ceilings and likewise, in a room usually containing many people, low ceilings feel uncomfortable for most. Cost and ineffective ventilation/air conditioning may be a barrier to this.
