After searching everything I could think of to locate the builder of a house I love, I decided that after being a visitor of the site it was about time I made an account. Many years ago I saved the first image below because I love the design of the house. I recently saw a similar house for sale and now I'm really keen to know who the builder is so I can see if we want to use them for our future house. The style is close to my builder actually and they build around Victoria. I have listed my builder in my thread. You can check them out. One thing thou, do prepare to pay for premium for this style as they are much more expensive to build than modern style house. I have learn that from my own build. Not quite on the scale you're looking at, but depending how flexible they are, could be an option. I think if you found a double story plan you liked, it would be quite easy to factor in most of the elements (e.g. stacked stone and cladding - maybe Newport - to the exterior; French style windows; etc), but I feel like the roof pitch might be the hard part that they may be hesitant with? Who knows though, maybe they have done that type of thing before!
