We decided to put a wine rack in above the fridge similar to the link below

We have been looking for fridges and noticed our fridge provisioning height is 1765mm high with the wine rack above. We can't find a fridge to fit and asked the builder to remove a row of the wine rack.
But as we have started construction, the builder wants a money to remove a row of the wine rack as a variation.
Can we remove a row after handover, if so is it easy and will it look good?

Looking at that picture I don't think you could alter it neatly. I know I couldn't.
You might be as well to remove it entirely and look for another rack after handover.

Not sure how much they're charging for a variation but just consider the annoyance and time to get it done after handover when considering what to do.
Depending on the construction and how handy you are on the tools it might be OK but no one can really answer that for you.
Your best bet might be to let it run and after handover remove the entire unit, take it back yourself to the kitchen mob to rectify and reinstall yourself.
How you remove or fix that unit to a wall when you can't even stick your hand down one of the openings is beyond me but there must be a simple trick.
