Maybe I haven't explained right. . I usually don't pay for things until I have what I'm paying for, but I do understand that with the entire cost of the job being high, that he may want some of the money up front, but I'm just not used to this sort of thing so am keen to hear about the experiences of others.
All that's done so far really is to move some dirt, and he has asked me to pay $8000 now which comes of the total cost.

no no.. I'm just not reading right. I think you're right. I usually pay enough so that if they don't complete the job you can cover someone else finishing it. For example if the deliver a kitchen and ask for 80% I will only pay what I think the cabinets are worth. You need something to hold over them to make sure they will come back to fix any errors. On the same token they might have had people refuse to pay before after they have completed the job. So if they've done some excavation and formed it up + steel that would probably be 30-40% of the job at a guess.
