You definitely don’t need a sink in your pantry, we don’t in our design. Some people like a 2nd sink or area to wash dishes away from main kitchen or an additional food prep area.
It’s your home though, you design it how you want and what works did you. For example we deleted the rumpus and added a deck, we added a shower downstairs in case my mum lives with us in the future, we wanted more garden so cut some off the living area, etc.
It’s great to get ideas from others but not all of them will be appealing to you or suit your needs.
We added a window in our pantry and now I’m thinking it may not be great for the contents of the pantry!

In our case we added a sink in our pantry because i wanted a second one that has a single bigger bowl than the main sink. This will be for washing the bigger items that won't fit in the main sink, and also to wash stuff that might otherwise mess up your kitchen (like fresh fish, etc.).
It all depends on how you want your kitchen+pantry to function.
My suggestion again is to visit several display homes from different builders, have a feel of the space and floor layout, see what works for you and take inspiration from there.
Nothing like experiencing this first hand yourself. Also, bring a tape measure, take notes, see what dimensions you're comfortable at. Take lots of pictures and videos.
This will all help you decide how big you want your spaces to be.
