Sarking, in modern terms, is just a layer of foil under the tiles.
I think it keeps dirt/dust out, as well as having slight insulative properties.

This is much more effective than just sarking on its own. It also insulates against noise (eg rain) on colourbond roofs. Even with this I still went for ceiling batts as well, although a bit of an overkill, I wanted maximum insulation as I am not having aircon. With good insulation like this the roof colour really wont make much difference if any, although I have heard that having solar panels on your roof really does make a difference in reducing room temperatures.
