I am a huge fan of high ceilings and I have 9 ft ceilings throughout my single story house. I would do the whole house. Have not found bedrooms too cool in winter - admittedly I live in hot dry area of Australia. We run r/c air con for about half hour before going to bed on a really cold night and thats it - do not have an electric blanket or any other bedroom heating and is fine. However it now means we can comfortably fit a taller vehicle in the garage, plus I'm going to love having high ceilings in the bedroom. In WA display homes I've found the most popular choice of late is for high ceilings usually just in the master bedroom, entry, and main living areas. The option is there to have the whole house, if you can afford the extra outlay and possible heating/cooling costs that come with it. We couldn't afford either, but it was more economical to increase the height of the whole house then just the living areas. From memory it was going to cost $8000 or so for the living, $12000 for the whole lot?! These are just guestimates, it was a long time ago when we discussed it with the builder! Going to the display homes recently, all the mid to upper end have the whole house at the higher ceiling. Good for adding ceiling fans!!! No banging heads and nasty accidents when turned on (my 6'6" husband has had some very near misses with fans that are on in normal ceiling homes!) and having fans is cheaper then running the aircon constantly! I like the space it gives to a room, but if I were to do it, I would also increase the height of the door ways. Unfortunately we couldn't afford to do either, but we did manage to get a freebie from the builder and our alfresco is recessed with a 31c ceiling and we will be putting a fan in there!
