Just been to our site again last weekend (we try to drop by once a month) & build is progressing well (construction started since June) albeit we do see notice some workmanship issues with the bricks layering (from internal, external looks fine) - job looks sloppy to me. Before I starts to question the SS (whom been great), can anyone confirm if this is normal & will be "cleaned up" later on? I checked with some of my mates & they confirmed that it's absolutely normal & will be patched up nicely before insulation & gyprock.

IMHO that's how they do the brick work. If You got red bricks, it's going to be rendered. All the outside imperfections will be covered with render. Inside will be hidden away with insulation and plaster wall.
Other coloured bricks will be cleaned nicely. Finishing touches are done to outside not in.
Corners will be filled with cement for larger gaps, smaller ones will be done with silicon sealing.
