A lot of volume builders aren't keen on knockdown-rebuilds, because of access issues, permit problems, having to work around existing trees, underground services, power lines and a thousand other things. It's no good asking people "who's the best builder?", because you'll get a different answer from everyone you ask. Do the rounds of reputable builders, large and small, and narrow it down to those who'll actually do the job - then you can start to compare. I would be wary.
