OK.... the secret ingredient is called....PATIS from your local asian grocer... or you can get fish sauce from coles or woolies but the other is better...
I had it...till melb, when I was sorting all the papers out, smiled at the memory and then biffed it.
it had travelled to singapore with me, then england and then melbourne...so it had seen some sights
threw my old e tickets, tissues, maps of lunch places in kent and dorset, car rental agreements, brochures etc out, so that went too...sorry.

1 pack - Hokkian noodles
1/4 - Cabbage
1 bunch of Bok Choi
1 red Capsicum
1 decent sized onion
1 carrot
3 lemons
minced or fresh garlic 9 minced is easier
sesami oil (pref)
750g Pork Rashers
Method
Slice your carrot up and get it on the boil.. 3/4 cook it
Slice your pork up 5mm apart.. try to buy without the bone otherwise cut it out first.
shred your cabbage
slice your bokk Choi
slice your capsicum
slice your onion
and in that order.....JOKES
once you got your veges cut and your carrot boiled... here we go
big saucepan needed.
3tbl spoons oil
heat your onion till clear
add 2 heap tea spoons of garlic
add your pork and sear it
chuck in all other veges and fry off till cabbage soft
pre boil you noodles and then add them
stir it all up, juice your lemon and add it
mix it well get the lemon flowing
then add your patis to taste... it is quite salty but dont be scared to be generous.
let it mix for 10mins and SERVE
serves 4 double everything to serve 8
