Ceilings, etc won't be in so they won't be a problem. Personally if it was me, I would give them the order, make sure they take care on site, and if something is damaged, hold part of their payment to fix it. Any damage they make to gutters won't be amounting to much at all - well not enough to have a major fight over Not sure about the noise with the sarking - as long as they install it as per manufacturer's recommendations then all should be ok.
