In response to your questions (I am no expert by any means, but have been building a house here in WA myself), here are my thoughts: 1. Most houses that are double brick are simply two brick walls that have a cavity between them for insulation and wiring. There is usually no timber/metal frame used. They stand well by themselves. Most builders here in WA use a version of these types of bricks for the internal wall: https://brikmakers.com/product?type=vert&colour= These bricks are not meant to be exposed and this is where it would become expensive to expose the internal walls of your house. If you did want to expose the internal walls to be brick, you would need to switch out the brick to an internal face brick that you liked, and this can get really expensive with project builders. Most would recommend against it. Those internal utility bricks are cheap and that's why all double brick houses use them for their internal and external walls (that will be rendered). 2. When they do your internal walls, they usually gyprock the internal walls or plaster them. I can't speak to the benefits or disadvantages of each, someone else would have to chime in here. But a structurally sound house should not show cracking in the internal walls. If they do I assume you have bigger problems. So I wouldn't worry about them cracking easily. To be honest I don't know many people that would have a full house of exposed brick, simply because of the cost. Good luck with your build! Yes, it would add considerably to the cost to use proper Face(?) Bricks on the internal wall so that they could be left exposed. As to plaster vs gyprock - plaster should be better if done well however there's the issue of actually getting someone on the job who has the requisite skill and tools. Normally very difficult to access and at the moment with massive skills shortages I'd guess close to impossible.
