Building to lock-up only | builder recommendations? | SA

Hi everyone

We have a property about 45mins south of Adelaide, we are exploring the option of the knock-down rebuild.
Ideally if we do a new build we would like to get the house built to lock-up stage and then complete the rest ourselves.
We have been in contact with a few builders but it seems very few of them are open to doing this.

I would love to hear whether anyone here has done this before, how it went and any builder recommendations would be greatly appreciated.
