Ring PGH tomorrow. Ask them for a list of home who have used those bricks. Go for a drive.
Forget internet photos or the display centres 2x2 meter wall. They do not give you a true idea of what you’ll get.

Mate I am building my house using Platinum. It's a wonderful brick. Go for it. However, be forewarned as below;
I suggest Cream or White Mortar...

Thank you nfaisal! Sorry for the late response, we went for Pewter finally and dark grey mortar(sorry don't know the name of the color.) I actually like the photo of your Platinum brick and also the grey mortar to show the beauty of the bricks(sorry I know you selected off-white, but this grey also looks nice. ).
Yes, got chipped is our major concern, no idea how to deal with it when it happens, paint it?

Pewtr is a great choice. Congrats and good luck with the build mate!
As for chipping, I suggest you write to them an email when the bricks are about to be laid. Also, speak to your SS and ask him to ensure care is taken as the bricks are fragile. You would need to keep an oversight via daily visits while the bricks are being laid.
if the contract is yet to be Signed, make sure you make them remove the clause which mentions possible variations in the Mortar Colour. You can ask them to purchase the Mortar ingredients direct from Austral bricks. They will charge you money for Austral bricks Mortar and then purchase cheap sand to do it themselves.
